Chicken and Bacon Shish Kabobs

  • 1/4 cup soy sauce
  • 1/4 cup cider vinegar
  • 2 tablespoons honey
  • 2 tablespoons canola oil
  • 10 large mushrooms, cut in half
  • 2 green onions, minced
  • 3 skinless, boneless chicken breast halves - cut into chunks
  • 1/2 pound sliced thick cut bacon, cut in half
  • 1 (8 ounce) can pineapple chunks, drained

  • I added pickled jalapenos for a sweet/spicy combo

Directions

  1. In a large bowl, mix the soy sauce, cider vinegar, honey, canola oil, and green onions. Place the mushrooms and chicken into the mixture, and stir to coat. Cover, and marinate in the refrigerator at least 1 hour.
  2. Preheat grill for high heat.
  3. Remove the mushrooms and chicken from the marinade and shake off excess. Pour the marinade into a small saucepan and bring to a boil over high heat. Reduce heat to medium-low and simmer for 10 minutes; set aside.
  4. Wrap the chicken chunks with bacon, and thread onto skewers so that the bacon is secured. I ended up boiling my bacon for 5-7 min before wrapping the chicken with it - I think this helped it to not burn while grilling. Alternate with mushroom halves and pineapple chunks.
  5. Lightly oil the grill grate. Arrange skewers on the prepared grill. Cook 15 to 20 minutes, brushing occasionally with remaining soy sauce mixture, until bacon is crisp and chicken juices run clear.

flourless peanut butter cookies

1 cup peanut butter
1 cup sugar
1 egg
1 tsp. baking powder

Mix together and bake at 350 for 8-10 minutes

Spicy Mushroom Burgers

Hi, I am Mandy's Mom. I am excited about sharing recipes. Thanks for including me. I am technologically challenged so I do not have great pics of my food to share but the recipes are good......trust me..........haha

2 lb. hamburger
4 tblsp. Worcestershire sauce
1 can beer
2 tblsp butter
3 cups sliced mushrooms
1 medium onion
1 can diced jalepenos
Sliced cheese( cheddar or whatever kind you like)
Buns

Mix hamburger with salt and pepper.
Form into 4 burgers making the center smaller than the edges for even cooking.

Cook hamburgers in 4tblsp Worcestershire sauce and 1/4 cup beer.

While hamburgers are cooking put sliced mushrooms, diced onions and a small can of diced jalepenos into a saute pan with 2 tblsp. butter. Saute until soft.

Drain hamburgers and return to skillet.
On the top of each burger put a spoon of the mushroom mixture with a slice of cheese(I used Cheddar). Add 1/2 cup beer and add a lid.
When cheese is melted remove from skillet and put onto a bun.

Cream Cheese & Green Olive Dip

Today I discovered this wonderful recipe for a cream cheese dip. It is yummy and oh so addicting. 

1 (8 ounce) package of cream cheese, softened
1 (8 ounce) package of finely shredded sharp cheese
1/2 cup of mayo '
2/4 cup of pimento stuffed green olives
1/2 cup celery
1/3 cup chopped onion
1/4 cup chopped green bell pepper 
2 teaspoons dried parsley 

Stir it all up by hand (Mike helped me do this part) or beat it with mixer on low speed.  Refrigerate for one hour.  ENJOY with crackers.  I added a drop of Tabasco sauce to my cracker to spice it up a little as seen in photo. (I am a dork - I know)

Get in my Belly: Baked Ziti

I know we all love food and we are always talking about sharing recipes but we never really get a chance to get together and swap them! This blog was created for a fun way to share what we've been eating by posting new or favorite recipes for everyone to try :)  The first recipe I am going to share is for Baked Ziti, one of my favorite things to eat! If I keep making this I might not fit in my wedding dress!

Baked Ziti










Ingredients:

1 lb dry ziti pasta
1 onion, chopped--I always get whatever sweet onion they have available at the store 
1 lb lean ground beef or ground italian sausage--italian sausage is better in my opinion 
2 (26 ounce) jars spaghetti sauce--I usually get tomato basil kind 
6 slices of provolone cheese--i've tried with slices of smoked fontina too and was great
1 1/2 cups sour cream--i always get the organic or natural kind--it makes a difference!
1 pkg shredded mozzarella cheese
1 pkg shredded or grated parmesan cheese

Directions:

1. Bring a large pot of lightly salted water to a boil; Add ziti pasta, and cook until al dente, about 8 minutes; drain.2. In a large skillet, brown onion. Once almost carmelized, add the beef or italian sausage and cook through. Add 2 jars spaghetti sauce, and simmer 15 minutes.
3. Preheat the oven to 350F.
4. Butter a 9x13 inch baking dish.
5. Layer as follows: 1/2 of the ziti, Provolone cheese, sour cream, 1/2 sauce mixture, handful of shredded mozz and parm, remaining ziti, another handful or so of mozzarella and parm cheese and remaining sauce mixture; Top with remaining mozzarella and parmesan or whatever is needed to cover top.
6. Bake for 30 minutes in the preheated oven, or until cheeses are melted.
